Ingredients

  • 1 (12 ounce) package English muffins
  • 1 (14 ounce) jar pizza sauce
  • 1 (6 ounce) can sliced black olives
  • 1 (6 ounce) can mushrooms
  • 1 tomato, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (8 ounce) package shredded mozzarella-style vegan soy cheese, or to taste

Cooking Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Slice English muffins in half and toast in a toaster.
  3. Lay halved English muffins on the prepared baking sheet; spread 1 tablespoon pizza sauce on each. Sprinkle olives, mushrooms, tomato, red bell pepper, and green bell pepper onto muffins. Top with vegan cheese.
  4. Bake in the preheated oven until cheese is warm and melty, about 10 minutes.
